Ingredients:* Maida - 2 cups* Sooji - 1/4 cup * Sugar - 1 tbsp * Baking Powder - 1/2 tsp* Baking Soda - 1 tsp (dough) + 1/2 tsp (chole)* Curd - 1/4 cup* Salt to taste* Tea Leaves - 1 tbsp, Amla - 1 tsp * Kabuli Chana - 2 cups* Ginger - 2 tbsp * Garlic - 3 tbsp * Green Chilli - 3pc* Onion - 1.5 cups* Haldi Powder - 1 tsp * Kashmiri Chilli Powder, Coriander Powder - 1 tbsp each * Red Chilli Powder - 1 tsp * Tomato Puree - 1.5 cup* Chole Masala - 3 to 4 tbsp Recipe: 1. Bhature:Maida, Sooji, Sugar, Baking Powder, Baking Soda, Curd, Oil, Salt, WaterKnead for 10-15 mins to form a dough. Coat with oil and cover, let it rest for 1-2 hours. 2. Take small portions, make pede, cover and let it rest. 3. Fill it with some coriander and paneer. (Optional)4. Roll them out and fry in hot oil. 1. CHOLE: 2. Boil water with tea leaves and amla powder.2. Take a cooker, add soaked and washed chole (soak overnight), baking soda, water, salt and tea-amla water. Let it cook for 3-4 whistles on high flame OR 6-7 whistles on medium flame. 3. Take a kadhai, add oil, ghee, ginger, garlic, green chilli, onion and let it cook till translucent. 4. Add the spices (check ingredient list) along with some water and let it cook. 5. Add tomato puree, salt and chole masala. Let it cook properly till oil rises. 6. Add the boiled chole to the tadka and mix well. Let it simmer. Top with ginger juliennes, green chilli, coriander, grated paneer and ghee tadka.
